Ingredients
Scale
For the Bread
- 1/2 cup (113g) unsalted butter, softened
- 2/3 cup (133g) granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup (120ml) milk
- 2 medium apples, peeled, cored & diced (mix of tart & sweet)
- 1/3 cup (67g) brown sugar
- 1 tsp ground cinnamon
For the Glaze
- 1/2 cup (60g) powdered sugar
- 1–2 tbsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal after baking.
- Prepare the cinnamon-apple mixture: In a medium bowl, toss the diced peeled and cored apples with brown sugar and ground cinnamon until evenly coated. Set aside to let the flavors meld.
- Make the batter: In a large mixing bowl, cream together the softened unsalted butter and granulated sugar using a hand mixer or stand mixer until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Then stir in the vanilla extract for added aroma and sweetness.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the creamed butter mixture alternately with the milk, beginning and ending with the flour mixture. Mix gently until just combined to avoid overmixing, which can toughen the bread.
- Assemble the loaf: Pour half of the prepared batter evenly into the lined loaf pan. Spoon half of the cinnamon-apple mixture over the batter. Repeat by adding the remaining batter, then top with the rest of the apple mixture. To create a marbled effect, gently swirl the batter and apple mixture together using a knife, taking care not to overmix.
- Bake the bread: Place the loaf pan in the preheated oven and bake for 50–55 minutes, or until a toothpick inserted into the center of the bread comes out clean. This ensures the loaf is fully cooked inside.
- Cool the bread: Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then carefully transfer the bread to a wire rack to cool completely before glazing, which prevents the glaze from melting and running off.
- Prepare and add the glaze: In a small bowl, whisk together the powdered sugar, 1 to 2 tablespoons of milk, and vanilla extract until smooth and pourable. Drizzle the glaze generously over the cooled bread, adding an extra touch of sweetness and moisture.
- Serve: Slice the bread and enjoy it warm or at room temperature, perfect for breakfast, a snack, or dessert.
Notes
- For best apple flavor, use a mix of tart and sweet apples like Granny Smith and Fuji or Honeycrisp.
- You can swap milk with any dairy-free alternative like almond or oat milk for a lactose-free version.
- To prevent sinking apple pieces, toss them with a tablespoon of flour before adding to the batter.
- Ensure not to overmix the batter to keep the bread light and tender.
- Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- This bread can be frozen for up to 2 months; thaw overnight in the refrigerator before glazing and serving.
