Ingredients
Scale
Pasta
- 400g short pasta (fusilli or gemelli)
Onions & Flavorings
- 2 large onions, thinly sliced
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- Salt & black pepper to taste
- Fresh thyme (optional, for garnish)
Cheese & Cream
- 200g goat’s cheese, crumbled
- 200ml double cream
- 100g grated mozzarella
- 50g grated Parmesan
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the pasta dish.
- Cook Pasta: Boil the pasta in salted water until al dente, then drain and set aside to combine later.
- Caramelize Onions: Heat olive oil in a pan over medium heat. Add the thinly sliced onions and cook slowly for 15–20 minutes until they are golden and tender, stirring occasionally to prevent burning.
- Add Balsamic Vinegar: Stir in the balsamic vinegar with the caramelized onions and cook for another 5 minutes until the mixture becomes sticky and well-coated.
- Prepare Cheese Mixture: In a bowl, mix together the double cream and crumbled goat’s cheese. Season with salt and black pepper to taste for a creamy, tangy sauce.
- Combine Ingredients: In a baking dish, mix the cooked pasta with the balsamic onion mixture and the cream and goat cheese sauce, ensuring an even distribution.
- Add Cheese Topping: Sprinkle the grated mozzarella and Parmesan over the top of the pasta mixture to create a cheesy crust when baked.
- Bake: Place the dish in the preheated oven and bake for 20–25 minutes until the cheese is golden, bubbly, and slightly browned on top.
- Garnish and Serve: Remove from oven and garnish with fresh thyme leaves if desired, then serve warm for a comforting meal.
Notes
- Cooking the onions slowly is essential for developing their sweetness and flavor.
- Using double cream gives the sauce its richness; you may substitute with a lighter cream for a reduced-fat version, noting the texture might differ.
- Fresh thyme adds a lovely herbal note but is optional based on preference.
- For a vegetarian version, ensure cheeses are free from animal rennet.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven for best results.
