Instructions
- Prepare Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside to allow flavors to meld.
- Cook Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add diced chicken breast, season with salt and pepper, and cook for 5–6 minutes, stirring occasionally until the chicken is browned and cooked through. Remove chicken from the pan and set aside.
- Scramble Eggs: In the same skillet, pour in the beaten eggs and scramble until just set but still moist. Remove eggs and set aside with the chicken.
- Sauté Vegetables: Add a drizzle of oil to the pan. Sauté diced carrots and minced garlic for 2–3 minutes until softened and fragrant. Stir in green peas and cook for an additional minute to heat through.
- Stir-fry Rice: Add the cold cooked rice to the pan with vegetables. Stir-fry on high heat for 3–4 minutes, breaking up any clumps to ensure the rice is evenly heated and slightly crisped.
- Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan with the rice and vegetables. Stir well to mix all components evenly.
- Add Seasoning: Pour soy sauce over the mixture and stir to distribute flavor consistently throughout the dish.
- Add Bang Bang Sauce and Finish: Pour the prepared bang bang sauce over the rice mixture. Stir thoroughly to coat all ingredients and warm everything through.
