Quesadillas

  • 4 large flour tortillas

Instructions

  1. Prepare the chicken mixture: In a bowl, combine the shredded chicken and barbecue sauce until the chicken is evenly coated with the sauce, ensuring a flavorful filling.
  2. Heat the skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm up for even cooking.
  3. Assemble first quesadilla: Place one flour tortilla in the skillet, then sprinkle 1/2 cup of shredded cheddar cheese evenly over the tortilla surface. Next, spread 1/2 cup of the BBQ chicken mixture over the cheese, followed by another 1/2 cup of shredded cheese to help everything melt together.
  4. Top and cook first side: Cover the filling with a second tortilla and cook for 3–4 minutes, or until the bottom tortilla turns golden brown and the cheese begins melting.
  5. Flip and cook second side: Carefully flip the quesadilla using a spatula and cook for an additional 3–4 minutes until the other side is golden and the cheese is fully melted inside.
  6. Repeat assembly: Remove the cooked quesadilla from the skillet and set aside. Add the remaining tablespoon of olive oil to the skillet if needed, then repeat the assembly and cooking process for the remaining tortillas and filling.
  7. Serve: Once cooked, slice each quesadilla into wedges. Garnish with chopped green onions if desired, and serve warm for the best texture and flavor.
