Tortillas:

Instructions

  1. Prepare the Chicken Mixture: In a large bowl, combine shredded chicken, cheddar cheese, green onion, red onion, buffalo sauce, Greek yogurt, sea salt, and garlic powder. Mix until all ingredients are well incorporated.
  2. Warm the Tortillas: Heat the tortillas in the microwave for about 10 seconds to make them pliable and easier to roll without cracking.
  3. Roll the Taquitos: Place approximately 2 to 3 tablespoons of the chicken mixture on one side of each tortilla. Tightly roll up each tortilla around the filling to form a taquito.
  4. Cook the Taquitos: Heat a non-stick skillet over medium heat. Place the taquitos seam side down and cook for about 3-4 minutes per side or until all sides are golden brown and crisp.
  5. Serve: Remove from heat and top with additional chopped green onions if desired. Serve with ranch or blue cheese dressing for dipping.

  • You can substitute almond flour tortillas with corn or flour tortillas if preferred, but cooking times may vary.
