Chicken Mixture:

Tortillas:

Instructions
- Prepare the Chicken Mixture: In a large bowl, combine shredded chicken, cheddar cheese, green onion, red onion, buffalo sauce, Greek yogurt, sea salt, and garlic powder. Mix until all ingredients are well incorporated.
- Warm the Tortillas: Heat the tortillas in the microwave for about 10 seconds to make them pliable and easier to roll without cracking.
- Roll the Taquitos: Place approximately 2 to 3 tablespoons of the chicken mixture on one side of each tortilla. Tightly roll up each tortilla around the filling to form a taquito.
- Cook the Taquitos: Heat a non-stick skillet over medium heat. Place the taquitos seam side down and cook for about 3-4 minutes per side or until all sides are golden brown and crisp.
- Serve: Remove from heat and top with additional chopped green onions if desired. Serve with ranch or blue cheese dressing for dipping.

- You can substitute almond flour tortillas with corn or flour tortillas if preferred, but cooking times may vary.
