Butterscotch Pudding Layer
- 2 boxes (3.4 oz each) instant butterscotch pudding mix
- 3 cups half and half (or whole milk)

Instructions
- Prep: Get a 9×13 baking pan and set it aside.
- Crust: In a medium mixing bowl, combine graham cracker crumbs, light brown sugar, and melted butter. Press the mixture firmly and evenly into the bottom of the 9×13 baking pan to form a crust. Place the pan in the freezer for 20 minutes to set while preparing the other layers.
- Cheesecake Layer: Using an electric mixer, beat the cream cheese and powdered sugar together in a mixing bowl until smooth and creamy. Gently fold in 8 ounces of thawed Cool Whip using a wooden spoon or spatula until fully combined.
- Butterscotch Pudding Layer: In a separate bowl, whisk together the instant butterscotch pudding mix and half and half for 1-2 minutes until it begins to thicken. Let it rest for about 3 minutes to allow the pudding to fully set.
- Assemble The Butterscotch Lush: Remove the crust from the freezer. Spread the cheesecake layer evenly over the crust, making sure to reach the edges for a firm base layer. Next, spread the thickened butterscotch pudding layer over the cheesecake layer. Finally, spread the remaining 8 ounces of Cool Whip evenly atop the pudding layer.
- Fridge Time: Cover the pan tightly with a lid or plastic wrap and refrigerate for at least 6 hours, preferably overnight, to allow the layers to set and flavors to meld.
