Description

These Cherry Cobbler Muffins are a delightful treat combining tender muffin texture with a sweet, cinnamon-spiced cobbler topping. Bursting with fresh cherries and lightly sweetened, they make for a perfect breakfast, snack, or dessert.

Ingredients

Scale

Muffin Batter

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)

Cobbler Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until the mixture is smooth and fully blended.
  4. Assemble the Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix to keep muffins tender. Fold in the pitted cherries evenly throughout the batter.
  5. Prepare the Cobbler Topping: In a small bowl, combine flour, brown sugar, and ground cinnamon. Cut in the cold diced butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  6. Fill & Top Muffins: Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full. Evenly sprinkle the cobbler topping over the batter in each cup for a crunchy, spiced crust.
  7. Bake: Place the muffin tin in the oven and bake for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean, indicating they are fully cooked.
  8. Cool & Serve: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature for the best flavor.

Notes

  • Fresh cherries are preferred for the best flavor, but frozen cherries can be used if thawed and drained properly.
  • Do not overmix the batter to avoid tough muffins; mix until just combined.
  • You can substitute milk with a non-dairy alternative to make it lactose-free.
  • For a nuttier topping, add chopped pecans or walnuts to the cobbler topping mixture.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
