Ingredients

Scale

Dip Ingredients

  • 8 ounces cream cheese, softened (light is okay, e.g., TJ’s Soft Spreadable Light)
  • 1 cup mayonnaise (light is okay, e.g., Best Foods Light Mayo)
  • 6 to 8 ounces grated cheese, divided (7 ounces Blarney Castle used)
  • 1 medium/large sweet Vidalia onion, peeled and diced (about 1 heaping cup)
  • 1 teaspoon ground black pepper (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cayenne pepper (optional and to taste)

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) and spray a 9-inch pie dish or similar-sized oven-safe baking dish with cooking spray to prevent sticking. Set the dish aside.
  2. Prepare ingredients: In a large bowl, combine cream cheese, mayonnaise, grated cheese (except reserve about 1/2 cup for topping), diced Vidalia onion, black pepper, salt, and cayenne pepper if using. Stir everything together until well mixed.
  3. Transfer mixture: Spoon the dip mixture into the prepared dish and smooth the top lightly using a spatula to create an even surface.
  4. Add cheese topping: Evenly sprinkle the reserved 1/2 cup grated cheese over the top of the mixture to create a golden, cheesy crust while baking.
  5. Bake: Place the dish in the preheated oven and bake for 45 to 50 minutes until the top is golden brown, bubbly, and the dip is heated through. The recipe’s tested bake time is 47 minutes.
  6. Cool and serve: Allow the dip to cool momentarily before serving to ensure it sets slightly and is safe to eat. Serve with chips, crackers, bread, pita chips, fresh vegetable sticks, or any favorite dippers.
