Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente, about 7–8 minutes. Drain well and set aside.

  3. Make Roux: In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1–2 minutes to form a roux, which will thicken your cheese sauce.
  4. Add Milk: Slowly whisk in 2 cups of warm whole milk, continuing to stir constantly until the mixture thickens and becomes smooth, about 5 minutes.
  5. Add Cheese and Seasonings: Remove the sauce from heat and stir in 2 cups of shredded sharp cheddar cheese and 1 cup of shredded mozzarella or Colby Jack cheese until melted and smooth. Season with 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder, mixing well.
