These Easy Coffee Truffles combine rich dark chocolate infused with aromatic instant coffee, coated in smooth milk chocolate for an indulgent treat. Truffle Base
- 90 ml (⅓ cup + 2 tsp) thickened or whipping cream (minimum 35% fat)
- 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
- 1 tablespoon instant coffee granules
Coating
- 125 g (4.5 oz) milk cooking chocolate (for coating)
Instructions
- Prepare the dish: Line a small, flat dish with non-stick baking paper to prevent the truffle mixture from sticking during chilling.
- Warm the cream: In a small saucepan, gently warm the cream over low heat until it is just below boiling point, making sure not to scorch it.
- Make the ganache: Remove the saucepan from heat and add the finely chopped dark chocolate and instant coffee granules. Stir continuously until the mixture is smooth and fully combined.
- Chill the mixture: Pour the smooth ganache into the lined dish and refrigerate for about 2 hours or until it becomes firm enough to handle.
- Form the truffles: Using a teaspoon, scoop about 3 teaspoons of the chilled mixture and roll it into small, uniform balls. Place each ball on a baking tray lined with baking paper, then chill again for 30 minutes to firm up.
- Melt the coating chocolate: Melt the milk cooking chocolate over a simmering water bath, stirring occasionally until fully melted and smooth, then allow it to cool for 15 minutes to slightly thicken.
- Coat the truffles: Dip each chilled truffle ball into the melted milk chocolate to cover completely. Place the coated truffles back on the lined tray to set.
- Final chill: Refrigerate the coated truffles for 30 minutes or until the chocolate coating is firm. Store finished truffles in an airtight container in the refrigerator to maintain freshness.
