Description

This Easy Egg Bake Casserole is a delicious, hearty dish perfect for breakfast or brunch. Made with crispy bacon, sautéed onions and bell peppers, fluffy beaten eggs, and melted cheddar cheese, this baked casserole combines savory flavors with a comforting texture. It’s simple to prepare and bakes to golden perfection, making it an ideal make-ahead option for busy mornings or feeding a crowd.

Ingredients

Scale

Meat

  • 6 oz diced bacon (approximately 5 slices)

Vegetables

  • 1 cup finely chopped onion
  • 1 teaspoon minced garlic
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper

Egg Mixture

  • 12 beaten eggs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Cheese

  • 1 cup shredded cheddar cheese (about 4 oz)

Instructions

  1. Preheat the Oven and Prepare the Baking Dish: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9×13 inch baking dish thoroughly and set it aside to be used later for the casserole.
  2. Cook the Bacon and Veggies: Heat a large skillet over medium heat and add the diced bacon. Cook until the bacon begins to soften. Add minced garlic and chopped onions to the skillet, cooking until the bacon starts to brown and the onions become translucent. Then add the diced red and green bell peppers. Cover the skillet and cook for 5 to 10 minutes, stirring occasionally, until the peppers are tender and the bacon is fully browned. Remove from heat and let the mixture cool slightly.
  3. Prepare the Egg Mixture: In a medium bowl, whisk together the 12 beaten eggs with sea salt and black pepper until well combined. Once the bacon and vegetable mixture has cooled, add it to the eggs and stir thoroughly to combine evenly.
  4. Add Cheese and Transfer to Baking Dish: Stir the shredded cheddar cheese into the egg, bacon, and vegetable mixture evenly. Pour the entire mixture into the prepared greased baking dish, spreading it out uniformly.
  5. Bake and Serve: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the top is set and has a slight golden brown color. Remove the casserole from the oven and allow it to cool for 5 minutes before slicing and serving warm.

Notes

  • You can substitute bacon with cooked sausage or turkey bacon for variation.
  • Feel free to add other vegetables such as mushrooms or spinach for extra nutrition.
  • If you want a sharper flavor, substitute cheddar cheese with Monterey Jack or pepper jack cheese.
  • Leftovers can be refrigerated and reheated within 2-3 days.
  • Ensure the egg mixture is evenly mixed to prevent any pockets of uncooked egg during baking.
