For the Potatoes

  • 1 ½ lbs baby potatoes, halved (or Yukon Gold potatoes, chopped)

For the Garlic Parmesan Finish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking and ease clean-up.
  2. Season the Chicken: In a medium bowl, toss the chicken chunks with olive oil, salt, black pepper, paprika, Italian seasoning, and garlic powder until well coated. Set aside.
  3. Season the Potatoes: In a separate bowl, combine the halved potatoes with olive oil, salt, black pepper, paprika, and dried parsley, mixing thoroughly to coat.
  4. Assemble in Dish: Spread the seasoned potatoes evenly in the prepared baking dish. Nestle the chicken pieces among the potatoes to allow even cooking.
  5. Bake Initial: Place the dish uncovered in the preheated oven and bake for 30 minutes. Stir the potatoes once halfway through cooking to ensure they roast evenly.
  6. Prepare Garlic Butter: While baking, mix the melted unsalted butter with minced garlic in a small bowl to create the garlic butter sauce.

  • You can substitute chicken thighs for chicken breasts as preferred; thighs tend to be juicier.
  • Use baby potatoes for quicker cooking; Yukon Gold can be chopped if baby potatoes are unavailable.
