Ingredients
Scale
Marinade
- 1 lemon, juiced and zested
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, finely minced or 1 tsp dried garlic powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp plus a pinch of sea salt
- 1/4 tsp coarse black pepper
Chicken & Topping
- 1 pound thin-sliced chicken breast
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh chopped parsley
- Additional wedges of lemon for garnish
Instructions
- Prepare the marinade: In a large mixing bowl, whisk together the lemon zest and juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper until well emulsified. Set aside 1/4 cup of this marinade for drizzling later.
- Marinate the chicken: Add the thin-sliced chicken breast to the remaining marinade in the bowl. Use tongs to coat each piece thoroughly. Cover with plastic wrap and refrigerate for 30 minutes to allow flavors to penetrate the meat.
- Heat the skillet: Place a nonstick skillet over medium-high heat. When hot, drizzle a little olive oil to prevent sticking.
- Cook the chicken: Lay the marinated chicken pieces in the skillet. Cook undisturbed for 4-5 minutes until the bottoms are golden brown. Flip and cook another 3-4 minutes until the chicken is cooked through and juices run clear when sliced.
- Serve the chicken: Transfer the cooked chicken to a serving plate. Drizzle the reserved marinade over the top to enhance flavor.
- Add toppings and garnish: Sprinkle the chicken with crumbled feta cheese and chopped fresh parsley. Serve with additional lemon wedges on the side for squeezing.
Notes
- For best results, use thinly sliced chicken breasts to ensure quick and even cooking.
- The reserved marinade should be drizzled over the chicken after cooking to add a fresh burst of lemon and herb flavor.
- You can substitute dried garlic powder with fresh garlic for a stronger aroma.
- If preferred, serve over a bed of rice, couscous, or alongside a Greek salad for a complete meal.
- Adjust seasoning to taste, especially salt and pepper, depending on your preference.
