  • Yield: 12 mini cheesecakes 1x

Description

These festive Grinch Mini Cheesecakes are perfect for holiday celebrations with their vibrant green color and creamy texture. Made with a chocolate Oreo crumb crust and a smooth, tangy cream cheese filling, these bite-sized treats are as delicious as they are adorable. Easy to prepare and baked in a cupcake pan, they make a fun and crowd-pleasing dessert for any occasion.

Ingredients

Scale

Crust

  • 1 cup Oreo Crumbs
  • 2 1/2 tbsp Butter, Melted

Cheesecake Filling

  • 2 (8 oz) packages Cream Cheese, Softened
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • Neon Green Food Coloring, to desired color

Toppings (Optional)

  • Whipped Cream
  • Sprinkles

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners to prepare for the crust.
  2. Make Oreo Crust: Pulse 10-11 Oreo cookies in a food processor until they become fine crumbs. Add the melted butter and pulse again until the crumbs are evenly coated and stick together.
  3. Form Crust Base: Evenly divide the Oreo crumb mixture among the lined cupcake pan wells. Press down firmly to form a compact crust layer in each liner.
  4. Prepare Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Add Color: Stir in the neon green food coloring little by little until the filling reaches your desired Grinch-like green color.
  6. Fill Cupcakes: Spoon about 1/4 cup of the cheesecake mixture into each prepared crust-lined cupcake liner, filling evenly.
  7. Bake: Bake in the preheated oven for 15-17 minutes. The cheesecake centers should remain slightly jiggly when done to ensure a creamy texture.
  8. Cool and Chill: Remove the mini cheesecakes from the oven and allow them to cool completely in the pan. Once cooled, refrigerate them to set firmly, preferably for at least 2 hours.
  9. Add Toppings: Before serving, optionally top each mini cheesecake with whipped cream and festive sprinkles for added fun and flavor.

Notes

  • Make sure the cream cheese is fully softened to avoid lumps in the batter.
  • The slightly jiggly center after baking ensures a creamy cheesecake; avoid overbaking.
  • Refrigeration is essential for the cheesecakes to fully set and achieve the best texture.
  • Use neon green gel food coloring for the most vibrant and true Grinch color without altering the texture.
  • These mini cheesecakes can be stored covered in the refrigerator for up to 3 days.
