  • 800 g Chicken Breast (cut into halves)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Chilli Powder

For Cooking

  • 25 g Grass Fed Butter (for cooking chicken)
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 15 g Grass Fed Butter

For the Sauce and Garnish

  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan Cheese (grated)
  • Fresh Parsley (for garnish)
  • Remaining Cajun Seasoning Mix (approx. 1 tsp used in cooking steps)
  • Day-old cooked rice (amount not specified but assumed about 200-250 g)

Instructions

  1. Marinate Chicken: Combine the chicken breast pieces with 1.5 tsp of Cajun seasoning mix and 2 tsp olive oil. Ensure each piece is evenly coated and refrigerate overnight in an airtight glass container for maximum flavor infusion.
  2. Cook Chicken: Heat 25 g of grass-fed butter in a pan over medium-high heat. Cook the marinated chicken until it develops a crispy, golden crust. Remove the chicken and let it rest for a few minutes before slicing into strips.
  3. Sauté Aromatics and Rice: In the same pan, sauté the chopped red onion and garlic cloves until fragrant. Add the remaining Cajun seasoning mix (about 1 tsp) along with day-old cooked rice. Toss and stir to evenly coat the rice with the spices and flavors.
  4. Prepare Creamy Sauce: Lower the heat and melt 15 g grass-fed butter in the pan. Add the Cajun seasoning mix and slowly whisk in 250 ml milk. Warm the mixture, then add 150 g light cream cheese and 40 g grated Parmesan. Continue stirring with a balloon whisk until the sauce is smooth and creamy.
  5. Assemble and Serve: Plate the Cajun spiced rice, top with sliced chicken strips, and drizzle the creamy sauce over the top. Garnish with freshly chopped parsley to add color and freshness. Serve immediately.
