Meatloaf
- 1/2 Yellow onion, peeled and minced

- 3/4 cup Milk (whole), divided

Mashed Potatoes
- 1 lb Yukon Gold potatoes, peeled and diced
- Remaining milk from the 3/4 cup (approximately 1/4 cup)
- 2 tbsp Butter
- Salt and pepper, to taste
Broccoli
- 1 Head broccoli, cut into florets
- Salt, for boiling water
Instructions
- Preheat and Prepare Onion: Preheat the oven to 425°F (220°C). Peel and finely mince the yellow onion to prepare it for the meatloaf mixture.
- Mix Meatloaf Ingredients: In a large bowl, combine the ground beef, panko breadcrumbs, 1/2 cup of the milk, ketchup, minced onion, Dijon mustard, Worcestershire sauce, and egg. Season the mixture with salt and pepper. Mix everything thoroughly using your hands or a large spoon until well incorporated.
- Shape Meatloaf: Line a baking sheet with aluminum foil or grease a loaf pan. Transfer the meat mixture onto the sheet and form it into a loaf approximately 6 inches long and 3 inches wide.
