- 1/4 cup (30g) vanilla protein powder
- 1/4 cup (40g) mini dark chocolate chips
Wet Ingredients
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 tsp peppermint extract
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until all ingredients are well integrated.
- Adjust Consistency: If the mixture feels too dry or crumbly to roll, add 1 tablespoon of unsweetened almond milk at a time, mixing well after each addition until the desired consistency is reached for rolling into balls.
- Add Chocolate Chips: Gently fold in the mini dark chocolate chips to distribute them evenly throughout the mixture without breaking them.
- Form Balls: Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a smooth ball. Repeat until all the mixture is used.
- Chill: Place the protein balls on a baking sheet lined with parchment paper to prevent sticking. Refrigerate for at least 20 minutes to allow the balls to firm up and hold their shape.
- Store: Once firm, transfer the protein balls into an airtight container. Store them in the refrigerator for up to one week, ready to enjoy as a quick snack or pre/post workout fuel.

- For a vegan version, substitute honey with maple syrup or agave nectar.
