Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs with the melted butter until evenly mixed. Press this mixture firmly into the bottom of a springform pan to create the crust layer.
  2. Make the filling: In a separate bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar while continuing to beat. Mix in the creamy peanut butter and vanilla extract until fully combined and silky.
  3. Whip the cream: In another chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter-cream cheese mixture to keep the filling light and airy.
  4. Assemble and bake: Pour the filling over the prepared crust in the springform pan, smoothing the top. Bake in the preheated oven for 50-60 minutes. The center should still be slightly jiggly when done.
