These truffles combine sweet shredded coconut, rich dulce de leche, creamy sweetened condensed milk, and crunchy crushed Nilla Wafers, all coated in smooth Ghirardelli dark chocolate. Truffle Mixture

  • 7 ounces sweetened shredded coconut
  • 1 can (14 ounces) dulce de leche
  • 1 can (14 ounces) sweetened condensed milk
  • 1 box (14 ounces, about 3 cups) crushed Nilla Wafer cookies

Chocolate Coating

  • 16 ounces Ghirardelli dark chocolate wafers

Instructions

  1. Combine Ingredients: In a large mixing bowl, add the shredded coconut, dulce de leche, sweetened condensed milk, and crushed Nilla Wafers. Stir thoroughly until all components are evenly incorporated into a uniform mixture.
  2. Form Truffles & Freeze: Line a baking sheet with parchment paper. Using a tablespoon measure, scoop portions of the mixture and place them onto the parchment paper, spacing them slightly apart. Once all the mixture is shaped into scoops, place the baking sheet in the freezer and chill for about 30 minutes until firm.
  3. Melt Chocolate: Following the package instructions, melt the Ghirardelli dark chocolate wafers in the microwave. Heat for about 1 1/2 minutes, stirring every 30 seconds to ensure smooth, even melting without burning.
  4. Dip Truffles: Remove the truffles from the freezer. Dip the bottom of each truffle into the melted chocolate, then place it back on the parchment paper-lined baking sheet.
  5. Drizzle Chocolate: Transfer the remaining melted chocolate into a small zip-top plastic bag, snip a small hole in one corner, and drizzle the chocolate over the tops of the truffles to create a decorative finish.
  6. Chill & Store: Place the decorated truffles in an airtight container and store them in the refrigerator or freezer until ready to serve to maintain firmness and freshness.

  • For easier dipping, keep the truffles cold or partially frozen to prevent them from falling apart.
  • You can substitute dulce de leche with caramel sauce if desired, but dulce de leche gives a richer, authentic flavor.
