  • 1 oz ranch dressing mix
  • 8 oz cream cheese
  • 8 oz shredded colby jack cheese (pre-shredded)
  • 7 oz fire-roasted chiles, drained
  • 2 jalapenos, seeds removed and diced

Instructions

  1. Prepare the slow cooker: Spray the inside of the slow cooker with non-stick cooking spray to prevent sticking.
  2. Add chicken: Place the chicken breasts into the slow cooker base evenly.
  3. Season chicken: Sprinkle the ranch dressing mix over the chicken and toss or flip the breasts so they are evenly coated with the ranch seasoning.
  4. Soften cream cheese: In a microwave-safe bowl, add cream cheese and heat in the microwave for 30 to 60 seconds until softened and easy to stir.
  5. Mix jalapenos and cheese: To the softened cream cheese, add diced jalapenos, fire-roasted chiles, and half of the shredded colby jack cheese. Stir well until the mixture is smooth and evenly combined.
  6. Combine cream cheese mixture with chicken: Spread the cream cheese jalapeno mixture evenly over the seasoned chicken in the slow cooker. Then sprinkle the remaining shredded cheese on top.
  7. Cook: Cover and cook on HIGH for 3.5 to 4 hours, or until the chicken is fully cooked and shreds easily with a fork.
  8. Shred chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker and mix it well with the cheesy jalapeno sauce.
