Slow Cooker Jalapeno Popper Chicken Recipe

  • Author: Marina
  • Total Time: 3 hours 40 minutes
  • Yield: 8 sliders 1x

Description

This Slow Cooker Jalapeno Popper Chicken recipe is a creamy, cheesy, and spicy twist on the classic jalapeno popper appetizer, transformed into a hearty and flavorful chicken dish. Perfect for sliders or sandwiches, this easy slow cooker recipe combines tender shredded chicken breasts with a rich mixture of cream cheese, ranch seasoning, fire-roasted chiles, and jalapenos for a delicious and crowd-pleasing meal.

Ingredients

Scale

Chicken and Seasoning

  • 2 lbs boneless skinless chicken breasts (thin sliced or regular)
  • 1 oz ranch dressing mix

Cheese Mixture

  • 8 oz cream cheese
  • 8 oz shredded Colby Jack cheese (pre-shredded preferred)
  • 7 oz fire-roasted chiles, drained
  • 2 jalapenos, seeds removed and diced

To Serve

  • Slider buns (such as King’s Hawaiian savory rolls)
  • Sliced green onion for garnish

Instructions

  1. Prepare the slow cooker: Spray the inside of the slow cooker with non-stick cooking spray to prevent sticking and make cleanup easier.
  2. Add the chicken: Place the chicken breasts into the slow cooker in an even layer.
  3. Season the chicken: Sprinkle the ranch dressing mix evenly over the chicken. Flip the chicken around gently so the ranch seasoning coats all the pieces well.
  4. Soften the cream cheese: In a microwave-safe bowl, add the cream cheese. Microwave it for 30 to 60 seconds, until soft and easy to stir.
  5. Mix the cheese and peppers: Add the diced jalapenos, fire-roasted chiles, and half of the shredded Colby Jack cheese to the cream cheese. Stir thoroughly until the mixture is smooth and combined.
  6. Combine with chicken: Spread the cream cheese mixture evenly over the chicken in the slow cooker. Then sprinkle the remaining shredded cheese on top.
  7. Cook the chicken: Cover the slow cooker and cook on HIGH for 3.5 to 4 hours, or until the chicken is cooked through and shreds easily with a fork.
  8. Shred and serve: Once cooked, shred the chicken directly in the slow cooker using two forks to mix the meat with the cheesy jalapeno sauce.
  9. Serve: Spoon the shredded jalapeno popper chicken onto slider buns and garnish with sliced green onions. Serve warm as delicious sliders or sandwiches.

Notes

  • For less heat, remove all seeds from the jalapenos before dicing.
  • You can use regular chicken breasts but thin sliced cook faster and shred easier.
  • Using pre-shredded cheese saves preparation time.
  • Slider buns like King’s Hawaiian savory rolls complement the spicy and creamy flavors well.
  • This recipe can be doubled for larger gatherings using a larger slow cooker.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the microwave.
