Cookie Dough
- 1/2 cup (111g) salted butter

Caramel Layer
- 20 caramels, unwrapped
- 1 tbsp milk
Chocolate Topping
- 2 cups (400g) milk chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
- Cream Butter and Sugar: In a mixing bowl, cream together the salted butter and granulated sugar until the mixture is light and fluffy, creating a smooth base for the dough.
- Add Egg White and Vanilla: Incorporate the egg white and vanilla extract into the creamed butter and sugar, mixing until the ingredients are thoroughly combined and the dough is smooth.
- Add Dry Ingredients: Mix in the all-purpose flour and baking powder, stirring until the dough is evenly combined and no dry flour remains.
- Roll and Cut Dough: Roll the dough out on a flat surface until it is about 1/4 to 1/2 inch thick. Use a round cookie cutter to cut out circles and transfer them to an ungreased baking sheet.
- Bake Cookies: Bake the cookie rounds in the preheated oven for 6-8 minutes, or until the cookies are puffy and no longer glossy on top. Remove from oven and transfer to a wire rack to cool completely.
- Prepare Caramel: While the cookies cool, microwave the unwrapped caramels with milk in a microwave-safe bowl for 1 minute, stirring every 30 seconds until smooth and creamy.
- Apply Caramel Layer: Spoon a few teaspoons of the melted caramel onto each cooled cookie and spread it almost to the edges of the cookie. Chill the cookies with caramel in the refrigerator for 10-15 minutes until the caramel sets.
- Melt Chocolate: Melt the milk chocolate chips in 30-second intervals in the microwave, stirring between each interval until fully melted and smooth.
- Top Cookies with Chocolate: Spread a small amount of melted chocolate over the caramel layer on each cookie. Allow the chocolate to cool and set completely before serving.
