  • Author: Marina
  • Total Time: 27 minutes
  • Yield: 1 12-inch pizza (6 slices) 1x

Description

A rich and creamy white garlic pizza sauce that serves as a delicious base for homemade or pre-made pizza dough. This sauce combines a velvety butter and flour roux with garlic and Parmesan cheese, topped with mozzarella and herbs for a flavorful, cheesy garlic pizza perfect for a comforting meal.

Ingredients

Scale

For the Garlic Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1¼ cups whole milk
  • 3 cloves garlic, finely minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • ¼ cup finely shredded Parmesan cheese

For the Pizza Assembly

  • 1 pre-made or homemade pizza dough
  • ½ cup of prepared garlic sauce
  • 8 oz low-moisture mozzarella, freshly grated
  • ¼ cup Parmesan, freshly shredded
  • ½ teaspoon Italian herb mix
  • 1 teaspoon olive oil (for brushing)
  • 2 tablespoons fresh basil, thinly sliced

Instructions

  1. Make the Garlic Sauce: In a small pot, melt the butter over medium heat. Add the flour and whisk constantly for 2 minutes to form a smooth roux without browning the mixture.
  2. Add Milk: Slowly pour in the milk while continuing to whisk to prevent lumps. Stir continuously for 3 to 5 minutes, until the sauce thickens and bubbles lightly.
  3. Season and Add Cheese: Stir in the minced garlic, sea salt, and black pepper. Remove the pot from heat and mix in the Parmesan cheese until it melts fully into a smooth sauce. Let the sauce cool slightly before using.
  4. Prepare the Dough: Preheat the oven to 450°F (232°C). Roll out the pizza dough onto your pizza pan or stone. Brush the surface evenly with olive oil and sprinkle the Italian herb mix over it for added flavor.
  5. Assemble the Pizza: Spread a thin, even layer of the prepared garlic sauce over the dough. Top with the freshly grated mozzarella and extra shredded Parmesan cheese evenly across the surface.
  6. Bake the Pizza: Place the assembled pizza in the preheated oven and bake for 10 to 12 minutes, or until the crust is golden brown and the cheese is bubbly with browned spots.
  7. Garnish and Serve: Remove the pizza from the oven and garnish with thinly sliced fresh basil ribbons. Serve the pizza hot for the best taste and texture.

Notes

  • To avoid lumps when adding milk, pour it slowly and whisk continuously.
  • The garlic sauce can be made ahead and stored in the fridge for up to 2 days.
  • Use freshly grated cheese for the best melt and flavor.
  • Adjust garlic quantity based on preference for a milder or stronger garlic taste.
  • Preheating the oven adequately ensures a crispy crust.
