Instructions

  1. Prepare garlic and aromatics: Roast or sauté the minced garlic until fragrant. You may also sauté onions or shallots at this stage if desired to add extra depth of flavor.
  2. Melt butter or heat oil: Place a saucepan over medium-low heat and melt the butter or warm the olive oil gently to prevent burning.

  4. Add cream or milk: Slowly pour in the heavy cream, milk, or plant-based milk, whisking continuously to combine the mixture smoothly.
  5. Incorporate cheese (optional): Gradually add the grated Parmesan or Pecorino cheese, whisking until it melts to thicken the sauce and enrich the flavor.
  6. Season: Add salt, black pepper, a pinch of nutmeg, and fresh or dried herbs such as thyme, basil, or oregano. Taste the sauce and adjust the seasoning as needed for balance.
  7. Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce directly in the pan until creamy.
  8. Adjust consistency: If the sauce is too thick, thin it with additional milk or broth to reach a pourable consistency suitable for drizzling. Alternatively, gently simmer to thicken the sauce further if you prefer a spreadable pizza base.
