These Cinnamon Roll Muffins combine the classic flavors of cinnamon rolls with the convenience of a muffin. Easy to make and bake, these muffins offer gooey, melt-in-your-mouth goodness in every bite.

Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Swirl Filling

  • ⅓ cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to ensure even distribution of leavening and sweetness.
  3. Combine wet ingredients: In a separate bowl, mix the milk, melted unsalted butter, egg, and vanilla extract until well combined and smooth.
  4. Combine wet and dry: Pour the wet ingredients into the dry ingredients, gently stirring just until no visible streaks of flour remain. Avoid overmixing to keep the muffins tender.
  5. Prepare cinnamon filling: In a small bowl, combine the packed brown sugar, ground cinnamon, and melted butter, mixing until it forms a loose, spreadable filling.
  6. Layer batter and filling: Spoon about 1 tablespoon of batter into each muffin cup, then add a small spoonful of the cinnamon sugar filling on top.
  7. Top and swirl: Add more batter over the filling until the muffin cups are about three-quarters full, then gently swirl the cinnamon filling into the batter using a toothpick or knife to create a marbled effect.
  8. Bake: Bake in the preheated oven for 15 to 18 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Prepare glaze: While the muffins cool slightly, whisk together the powdered sugar, milk, and vanilla extract until smooth to form the vanilla glaze.
  10. Glaze and serve: Drizzle the glaze over warm muffins. Serve immediately for best gooey, soft texture and irresistible flavor.

Notes

  • Do not overmix the batter to ensure muffins remain tender and fluffy.
  • For added texture, consider folding in chopped pecans or walnuts into the batter or cinnamon filling.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • Reheat muffins in the microwave for 10 seconds before serving to recreate that fresh-baked warmth and softness.
