Ingredients
Scale
Chicken and Vegetables
- 2 pieces chicken breasts (boneless, skinless)
- 2 cups broccoli (fresh or frozen)
Cheese and Dairy
- 2 cups cheddar cheese (shredded, divided)
- 1 cup sour cream
- 1/2 cup milk
Seasonings and Soup
- 1 can cream of chicken soup (10.5 oz)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Prepare the crockpot: Grease the crockpot to prevent sticking and place the boneless, skinless chicken breasts at the bottom evenly.
- Make the creamy sauce: In a medium bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until the mixture is smooth and well combined.
- Add the sauce to the chicken: Pour the creamy mixture over the chicken in the crockpot, making sure each breast is well coated to ensure flavor penetration during cooking.
- Slow cook the chicken: Cover the crockpot and cook the chicken on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is thoroughly cooked and tender.
- Shred chicken and add broccoli and cheese: Using two forks, shred the chicken directly in the crockpot, then stir in the broccoli and 1 cup of shredded cheddar cheese. Continue cooking for another 20 to 30 minutes to allow broccoli to soften and cheese to melt.
- Finish with remaining cheese: Sprinkle the remaining 1 cup of cheddar cheese on top. Cover and cook just until the cheese melts to create a rich cheesy topping. Serve warm, ideally over cooked rice for a complete meal.
Notes
- You can use fresh or frozen broccoli depending on availability; frozen may need slightly less cooking time.
- If you prefer a thicker sauce, reduce the milk quantity slightly or cook uncovered for the last 20 minutes.
- For extra flavor, add a pinch of smoked paprika or dried thyme to the creamy mixture.
- This dish can be stored in the refrigerator for up to 3 days and reheated gently.
- Serve over rice, pasta, or mashed potatoes for a filling meal.
