Ingredients

Scale

For the Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/3 cup cream cheese (softened)
  • 1/4 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Taquitos

  • 1012 small corn or flour tortillas
  • Oil for frying (if deep frying) or cooking spray (for baking/air frying)

Optional Toppings

  • Sour cream
  • Guacamole
  • Salsa
  • Shredded lettuce
  • Diced tomatoes
  • Fresh cilantro

Instructions

  1. Prepare the Filling: In a large bowl, combine shredded chicken, shredded cheese, softened cream cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well until the ingredients are evenly incorporated into a creamy and flavorful filling.
  2. Prepare the Tortillas: Warm the tortillas slightly in a pan or microwave to make them flexible. This helps prevent cracking when rolling tightly.
  3. Assemble the Taquitos: Place a spoonful of the chicken mixture along one edge of each warm tortilla. Roll the tortilla tightly into a cylinder and place seam-side down to prevent unrolling during cooking.
  4. Cook the Taquitos: Choose your preferred cooking method:
    • Frying: Heat oil in a pan over medium-high heat. Fry taquitos for 2–3 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.
    • Baking: Preheat oven to 200°C (400°F). Arrange taquitos on a baking sheet, spray lightly with cooking spray or brush with oil, and bake for 15–20 minutes or until crispy and golden.
    • Air Frying: Preheat air fryer to 190°C (375°F). Place taquitos in the basket in a single layer, cook for 8–10 minutes, turning halfway through until golden and crisp.
  5. Serve: Serve the taquitos hot, topped with your choice of sour cream, guacamole, salsa, shredded lettuce, diced tomatoes, and fresh cilantro for a fresh and flavorful finish.

Notes

  • Roll taquitos tightly to keep the filling secure during cooking.
  • Using corn tortillas gives a more traditional texture and flavor.
  • Avoid overcrowding the pan or air fryer basket for even cooking and crispiness.
  • Preheat oil properly before frying to ensure a crispy outside.
  • Store leftover taquitos in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or air fryer to restore crispiness rather than microwaving.
