- 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/3 cup cream cheese (softened)
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Taquitos
- 10–12 small corn or flour tortillas
- Oil for frying (if deep frying) or cooking spray (for baking/air frying)
Optional Toppings
- Sour cream
- Guacamole
- Salsa
- Shredded lettuce
- Diced tomatoes
- Fresh cilantro
Instructions
- Prepare the Filling: In a large bowl, combine shredded chicken, shredded cheese, softened cream cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well until the ingredients are evenly incorporated into a creamy and flavorful filling.
- Prepare the Tortillas: Warm the tortillas slightly in a pan or microwave to make them flexible. This helps prevent cracking when rolling tightly.
- Assemble the Taquitos: Place a spoonful of the chicken mixture along one edge of each warm tortilla. Roll the tortilla tightly into a cylinder and place seam-side down to prevent unrolling during cooking.
- Cook the Taquitos: Choose your preferred cooking method:
- Frying: Heat oil in a pan over medium-high heat. Fry taquitos for 2–3 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.
- Baking: Preheat oven to 200°C (400°F). Arrange taquitos on a baking sheet, spray lightly with cooking spray or brush with oil, and bake for 15–20 minutes or until crispy and golden.
- Air Frying: Preheat air fryer to 190°C (375°F). Place taquitos in the basket in a single layer, cook for 8–10 minutes, turning halfway through until golden and crisp.
- Serve: Serve the taquitos hot, topped with your choice of sour cream, guacamole, salsa, shredded lettuce, diced tomatoes, and fresh cilantro for a fresh and flavorful finish.
Notes
- Roll taquitos tightly to keep the filling secure during cooking.
- Using corn tortillas gives a more traditional texture and flavor.
- Avoid overcrowding the pan or air fryer basket for even cooking and crispiness.
- Preheat oil properly before frying to ensure a crispy outside.
- Store leftover taquitos in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or air fryer to restore crispiness rather than microwaving.
