Description
Crispy Smashed Carrots are a flavorful and texturally delightful side dish where tender boiled carrot rounds are gently smashed and roasted with olive oil, garlic powder, smoked paprika, and Parmesan cheese. This method creates crispy, caramelized edges with a soft center, enhanced by fresh parsley garnish. Perfect as a healthy, low-calorie vegetable side that pairs well with a variety of main courses and dietary preferences.
Ingredients
Scale
Carrots
- 1 lb carrots, peeled and cut into thick rounds
Seasoning and Toppings
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper to ensure easy cleanup and prevent sticking.
- Boil the carrots. Place the carrot rounds in salted boiling water and cook for 10–12 minutes until they are fork-tender but not mushy. Drain them well and allow to cool slightly to make handling easier.
- Smash the carrots. Arrange the boiled carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press down each carrot until it’s about half its original thickness, ensuring an even thickness for uniform roasting.
- Season and oil. Drizzle the smashed carrots generously with olive oil. Sprinkle garlic powder, smoked paprika, salt, and black pepper evenly over the carrots to enhance their flavor. Then, sprinkle the grated Parmesan cheese on top for a savory, crispy crust.
- Roast the carrots. Place the baking sheet in the oven and roast for 20–25 minutes, flipping the carrots halfway through, until they develop crisp, golden-brown edges and tender centers.
- Garnish and serve. Remove the carrots from the oven, garnish with freshly chopped parsley, and serve hot to enjoy the best texture and flavor.
Notes
- Do not overboil the carrots; they should be tender enough to pierce but firm enough to hold their shape when smashed.
- Use a flat-bottomed object to smash the carrots for even thickness and consistent roasting.
- For a vegan version, substitute Parmesan with nutritional yeast or a plant-based cheese alternative.
- Roasting on parchment paper or a silicone mat prevents sticking and eases cleanup.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
