  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 12 teaspoons lemon juice

Instructions

  1. Season and Cook Chicken: Season the bite-sized chicken pieces with salt, pepper, and 1 teaspoon of paprika. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes until lightly golden but not fully cooked through. Transfer the chicken to a plate to rest.
  2. Sauté Flavorings: Reduce heat to medium and melt butter in the same pan. Add minced garlic, chopped sun-dried tomatoes, dried oregano, red pepper flakes if using, and the remaining 1/2 teaspoon paprika. Cook, stirring often, for 1-2 minutes until fragrant and aromatic.
  3. Cook Orzo: Stir in uncooked orzo and chicken broth. Bring to a simmer and cook uncovered for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  4. Create Creamy Sauce: Lower the heat to low. Stir in heavy cream and freshly grated Parmesan cheese until the sauce is smooth and creamy. Add fresh spinach and stir for 1-2 minutes until wilted and fully incorporated into the sauce.
  5. Finish Chicken and Serve: Return the partially cooked chicken to the pan and cook for an additional 2-3 minutes, or until the chicken is cooked through completely. Stir in lemon juice to brighten the flavors. Serve immediately with extra Parmesan cheese on top if desired.
