Ingredients
Scale
Steak and Marinade
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Bowl Ingredients
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
Tzatziki Sauce
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1 tbsp chopped fresh dill (or parsley)
- Salt and pepper to taste
Instructions
- Marinate the Steak: In a bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the sirloin steak and coat it thoroughly with the marinade. Cover and refrigerate for at least 30 minutes to let the flavors develop.
- Prepare the Tzatziki Sauce: In another bowl, mix Greek yogurt with grated and drained cucumber, lemon juice, minced garlic, chopped dill (or parsley), salt, and pepper. Stir well and chill the sauce until ready to use.
- Cook the Steak: Heat a skillet over medium-high heat. Remove the steak from the marinade and cook for 4–5 minutes on each side, or until it reaches your desired doneness. Once cooked, transfer to a plate and let rest for several minutes before slicing thinly against the grain.
- Assemble the Bowls: Begin by layering the cooked grains as the base in serving bowls. Top with sliced steak, halved cherry tomatoes, and diced cucumber. Drizzle generously with the chilled tzatziki sauce and garnish with fresh herbs if desired.
Notes
- For the best flavor, marinate the steak for up to 2 hours if time allows.
- If you prefer, use fresh parsley instead of dill in the tzatziki sauce.
- You can substitute cauliflower rice for a lower-carb option.
- Letting the steak rest after cooking ensures juicier slices.
- Drain the grated cucumber well to prevent watery tzatziki.
