Description
Delicious and easy no-bake chocolate oatmeal bars featuring a buttery oat crust layered with a smooth peanut butter and chocolate filling, perfect for a sweet treat without using the oven.
Ingredients
Scale
Oatmeal Base
- 1 cup butter
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 3 cups rolled oats
Chocolate Peanut Butter Filling
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Prepare the Baking Dish: Line an 8-inch or 9-inch square baking dish with parchment paper, allowing the paper to overhang the edges for easy removal of the bars later. A 9×13-inch dish can also be used for thinner bars.
- Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together until the butter is fully melted and the sugar has dissolved completely. Stir in the vanilla extract.
- Add Oats: Mix the rolled oats into the melted butter and sugar mixture. Cook over low heat for 3 to 4 minutes, stirring continuously, until the ingredients are well blended and the oats are coated.
- First Layer of Oats: Pour half of the oat mixture evenly into the prepared baking dish and press it down firmly to form an even crust.
- Make Chocolate Peanut Butter Filling: In a microwave-safe bowl, melt together the peanut butter and chocolate chips by heating in short bursts, stirring until smooth and combined.
- Add Chocolate Layer: Pour the chocolate mixture evenly over the oat crust in the baking dish, reserving about 1/4 cup for drizzling.
- Top With Remaining Oats and Drizzle: Spread the remaining oat mixture over the chocolate layer, pressing it gently to adhere. Drizzle the reserved chocolate mixture on top.
- Chill to Set: Refrigerate the bars for 2 to 3 hours or overnight until firm. Bring to room temperature before cutting into bars for best texture.
- Final Texture Tip: The texture depends on how long the sugar mixture is cooked; insufficient cooking results in soft bars, while overcooking leads to dry and crumbly bars.
Notes
- Use parchment paper with overhang for easy removal of bars from the pan.
- You can substitute the chocolate chips for dark or semisweet varieties depending on preference.
- Microwave melting should be done in short intervals to avoid burning the chocolate and peanut butter.
- Allow bars to come to room temperature before cutting to prevent cracking.
- Adjust cooking time of sugar and butter carefully to get the desired bar consistency.
