Ingredients
Scale
Main Ingredients
- 1 cup butter
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Prepare the baking dish: Line an 8-inch or 9-inch square baking dish with parchment paper allowing the edges to overhang. This will help to lift the bars out more easily after setting. A 9×13-inch dish can be used for thinner bars.
- Melt butter and sugar: In a large saucepan over medium heat, melt the butter and brown sugar together until the butter melts completely and the sugar dissolves. Stir in the vanilla extract for added flavor.
- Add oats: Mix in the rolled oats and cook over low heat for 3 to 4 minutes, stirring constantly until all ingredients are well blended and the oats are coated.
- Form the first oat layer: Pour half of the oat mixture into the prepared baking dish. Spread it evenly and press down firmly to create a compact base layer.
- Make the chocolate peanut butter filling: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together, stirring until smooth and well combined.
- Assemble the bars: Pour the chocolate mixture evenly over the oat crust, reserving about 1/4 cup for drizzling. Then spread the remaining oat mixture over the chocolate layer and gently press it down. Drizzle the reserved chocolate mixture on top.
- Chill the bars: Refrigerate for 2 to 3 hours or overnight to allow the bars to set fully. Bring to room temperature before cutting into bars for best texture.
Notes
- The final texture depends on how long you cook the sugar and butter mixture; boiling long enough ensures the bars hold together without being too soft or too crumbly.
- If the sugar mixture doesn’t boil long enough, bars may be too soft.
- If boiled too long, bars can turn dry and crumbly.
- Using parchment paper with overhangs is crucial for easy removal from the pan.
- You can customize with different chocolate chips or nut butters according to preference.
