Instructions

- Simmer until sweet potatoes are tender: Bring the mixture to a simmer. Reduce heat to medium-low, cover the skillet, and cook for 12 to 15 minutes, stirring occasionally to prevent sticking, until the sweet potatoes are fork-tender.
- Reduce excess liquid: Remove the lid and continue cooking for 2 to 3 minutes if there is extra liquid to allow the dish to thicken slightly.
