Ingredients
Scale
Muffin Batter
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ¾ cup milk
- ⅓ cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
Cinnamon Swirl Filling
- ⅓ cup brown sugar, packed
- 1 tbsp ground cinnamon
- 2 tbsp unsalted butter, melted
Vanilla Glaze
- ½ cup powdered sugar
- 1 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with liners or lightly grease the cups to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Mix Wet Ingredients: In a separate bowl, combine the milk, melted unsalted butter, egg, and vanilla extract. Whisk until uniformly blended.
- Combine Batter: Pour the wet ingredients into the dry ingredients and gently stir just until no streaks of flour remain. Take care not to overmix to keep the muffins tender and fluffy.
- Prepare Cinnamon Filling: In a small bowl, mix the packed brown sugar, ground cinnamon, and melted unsalted butter until well incorporated, creating the cinnamon swirl filling.
- Assemble Muffins: Spoon about 1 tablespoon of the batter into each muffin cup. Add a small spoonful of the cinnamon mixture on top of the batter in each cup.
- Top and Swirl: Cover the cinnamon filling with more batter until each cup is about ¾ full. Using a toothpick or knife, gently swirl the batter and filling to create a marbled effect.
- Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Make Vanilla Glaze: While the muffins cool slightly, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Glaze and Serve: Drizzle the vanilla glaze over the warm muffins. Serve immediately to enjoy the gooey, soft, and irresistible cinnamon roll muffin experience.
