- 2–3 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 small yellow onion, chopped
- 3–4 garlic cloves, minced
- 1 (14.5 oz) can crushed tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
Instructions
- Place chicken in crock pot. Put the raw boneless, skinless chicken breasts at the bottom of your crock pot to serve as the base of the soup.
- Add aromatics and seasoning. Add the chopped onion, minced garlic, Italian seasoning, and crushed tomatoes evenly over the chicken for flavor layering.
- Pour in broth and cover. Pour 4 cups of low-sodium chicken broth into the crock pot, ensuring ingredients are submerged, then cover the lid securely.
- Cook the soup. Cook on low heat for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender enough to shred.
- Shred chicken and return. Remove the chicken breasts, shred them finely using two forks, and then stir the shredded chicken back into the soup.
- Add cream and Parmesan. Gradually stir in the heavy cream followed by the grated Parmesan cheese, continuing to mix until the cheese has melted fully into the soup.
- Simmer uncovered. Cook the soup uncovered on low heat for an additional 20 to 30 minutes to thicken and meld all flavors before serving.
