Instructions

  1. Prepare the Rub: In a medium bowl, combine ½ cup brown sugar and 1 teaspoon ground mustard thoroughly to make the rub mixture.
  2. Prepare the Ham: Unwrap the 6-8 lb bone-in ham and place it into a 6-quart slow cooker. Trim the ham if necessary to fit. Rub the brown sugar and mustard mixture all over the surface of the ham evenly.
  3. Cook the Ham: Pour 1 cup pineapple juice into the slow cooker around the ham. Cover with the lid and cook on low heat for 4 hours, or until the internal temperature of the ham reaches 140℉, ensuring it is fully heated and tender.
  4. Make the Glaze: In a medium saucepan, whisk together 1 cup pineapple juice and 1 tablespoon cornstarch until smooth.
  5. Combine Juices: Strain the cooking juices from the crockpot ham and reserve them. Measure ½ cup of these juices and add to the pineapple juice and cornstarch mixture in the saucepan.
  6. Simmer and Thicken: Bring the mixture to a simmer over medium-high heat and cook until the glaze thickens to desired consistency.
