Instructions

  1. Prepare the ham rub: In a medium bowl, combine ½ cup brown sugar and 1 teaspoon ground mustard thoroughly to create a flavorful sugar mustard rub.
  2. Place ham in slow cooker: Unwrap the ham and place it in a 6-quart slow cooker, trimming if necessary to fit. Rub the brown sugar mixture all over the surface of the ham evenly.
  3. Add pineapple juice and cook: Pour 1 cup pineapple juice into the slow cooker. Cover with the lid and cook on low heat for about 4 hours or until the internal temperature of the ham reaches 140°F (60°C), ensuring it is heated through.
  4. Prepare the glaze: Whisk together 1 cup pineapple juice and 1 tablespoon corn starch in a medium saucepan until smooth. Strain the cooking juices from the crockpot and add ½ cup of these juices to the saucepan with the pineapple juice mixture. Heat over medium-high heat, bringing it to a simmer.
  5. Thicken and adjust glaze: Cook the glaze until it thickens. Taste and add 1-2 tablespoons brown sugar as desired for sweetness. If it’s too salty, add a couple tablespoons of water to balance the flavor. To thicken further, mix additional corn starch with water and stir into the glaze until desired consistency is reached.

  • You can use uncut or spiral sliced ham. Keep in mind that spiral sliced ham heats quicker and can dry out if cooked too long, so adjust cooking time accordingly.
