- Mix custard and soak bread. In a bowl, whisk together 2 eggs, 0.5 cup milk, and 2 tablespoons of sugar until well combined. Dip the brioche slices into this mixture, allowing the bread to soak up the custard evenly but not become soggy.
- Cook toast until golden. Heat a non-stick pan over medium heat and cook the soaked brioche slices until they are golden brown on both sides and slightly crispy. This will take about 2-3 minutes per side. Remove and set aside.
- Prepare custard cream on stove. In a saucepan, whisk together 1 cup milk, 2 tablespoons sugar, and 1 tablespoon cornstarch until smooth. Place over medium heat and cook, stirring constantly, until the mixture thickens. Remove from heat and quickly whisk in the egg yolk to create a smooth, rich custard cream. Allow to cool slightly.
